If you are a roaster, you know that the way a coffee is processed matters just as much as where it’s grown. Indonesia is famous for a unique method called Giling Basah (Wet Hulled), but there is so much more happening now.

1. The Classic: Giling Basah (Wet Hulled)
This is what most people think of when they hear "Indonesian Coffee." Because of the high humidity in regions like Sumatra, farmers remove the parchment while the bean still has about 30% moisture.

The Result: A heavy body, low acidity, and those classic spicy or chocolate notes.

Best For: If you need a solid base for an espresso blend that cuts through milk, this is it. It gives that "punch" that many Australian cafe customers still love.
2. The Modern Choice: Fully Washed
Many specialty farms in Bali and Java are now moving toward Fully Washed processes. This is much cleaner and more familiar to roasters who usually buy from Central America.

The Result: Higher acidity, cleaner cup, and more floral notes.

Best For: Single-origin filter coffee or a modern, bright espresso. It’s a great way to surprise customers who think Indonesian coffee is only "dark and earthy."
3. The Experimental: Natural and Honey Process
We are seeing more farmers in Kintamani experimenting with Natural processing. It’s risky because of the rain, but when done right, it’s incredible.

The Result: Intense fruit sweetness—think dried berries or tropical fruits—with a syrupy body.

Best For: Roasters who want a "funky" or "fruit-bomb" coffee for their seasonal lineup.
4. Why Consistency Matters
The problem with some Indonesian beans in the past was inconsistent drying. You might get one bag that’s perfect and another that’s "musty."
That is why we are very strict with our sourcing. We only work with processors who have proper drying beds (patios or raised beds) and who monitor moisture levels constantly. We don’t want any surprises when you open a bag in your roastery in Adelaide.
